I love what this part of Italy means for me and want to share it. I have a passion for how rural Italy has retained a connection with the land and local food (and food traditions) that I feel we have largely lost; a connection that isn’t simply a nostalgic backward look at a way of life that most of the western world is losing, but an approach to food that we need to re-discover. In hosting these tours I want to share that passion and give something back to a local economy that I cherish.
Why Abruzzo?
A region apart - the history, culture and landscape of Abruzzo
Arriving in the Abruzzo region for the first time, you might think you were somewhere other than Italy. Separated from the rest of the country by the Apennine mountains, it was not until the 1960s and the building of tunnels connecting the region with Rome and Bologna, that travel became feasible. Its economy remains almost entirely agricultural and self-sufficient, geographically defined by the borders of the Gran Sasso, the highest part of the Apennines on one side and the Adriatic Sea on the other. Small wonder that Abruzzese food traditions are a reflection of its landscape as well as its people and that, more than other parts of Italy, it has retained its links to traditional produce and cultures. These unique features make Abruzzo such a special region to experience the close connection with its food culture, traditions and with seasonal and local ingredients. Abruzzo is also recognised as the greenest region in Europe as almost half of its territory, the largest in Europe, is set aside as national parks and protected nature reserves. These ensure the survival of 75% of Europe's living species, including rare species such as the small wading dotterel, the golden eagle, the Abruzzese chamois, the Apennine wolf and the Marsican brown bear. Food stories Abruzzo is home to a rich diversity of products and ingredients, unique to the region and all with a story. Some 17 of them, from cheese and apples to lentils and olive oil, are part of the Slow Food Ark of Taste – a measure of their global significance in the world of food traditions. We will be visiting some of these producers, (such as the wonderful Danielle D’Agostini sheep’s milk cheese produced 800metres up in the hills above farmhouse) and we will be using many of them to cook with.

Traditional Abruzzese cooking weaves its way through every food experience

Cookery Workshops.
Led by barny. Fun, informative, a little challenging, conversational - and contributing to the food we will all be eating

Lunch on the mountains.
On the amazing plains of the Campo Imperatore at Ristoro Mucciante. BBQ meat (the legendary arrostocini Abruzzese) and cheeses from the mountain sheep, on the open plains of the Campo. A unique and amazing experience.

Local Abruzzese Cooking.
Through the eyes of a celebrated chef. Alongside a conversation with Slow Food chef Antonio in his state of the art kitchen, we will be preparing lunch with typical Abruzzese dishes of the season and then enjoying a sit down meal in his restaurant with the dishes we have helped prepare.

Meals at the house.
Cooked by Rosie with fruit and vegetables from local markets and road-side stalls, a fantastic local butcher, local cheeses and charcuterie. And Alicia’s hens eggs and of course, wild boar from our friend Errico the hunter

A guided tour of Pescara
A contrast to much of the week - traditional rural cooking - this is an insight into urban street food and markets

Visit to a natural winery with tasting.
An afternoon outing to a local natural winery to sample some local grape varieties, learn about great local wines and visit the vineyards and cantina

Market Day.
A visit to the local market, and, with guidance from our chefs, selecting local seasonal ingredients for cooking in small groups to from part of a larger meal prepared by our chefs.

Cheese making with Lucia.
A visit to the farm of Daniele D’Agostino, a renowned producer of Pecorino di Farindola, one of only a handful of producers still making this traditional sheep’s milk cheese. With his mother, Lucia, you will make pecorino and ricotta from fresh raw sheep’s milk, the latter we will then use as part of that day’s evening meal.

Tasting Extra Virgin Olive Oil.
A chance to try different local olive oils, learn how to taste and appreciate the subtle different flavours of high quality EVOO and the process of producing an oil of the highest quality with Olive Oil Sommelier, Elio Ferrante

Foraging and eating lunch in the fields.
A morning foraging with the amazing and experienced Marta, followed by a meal in the fields made from the produce that we forage

Seafood extravagance.
A unique meal out on a Trabocco, an ancient fishing platform on stilts set off the Adriatic coast. A unique seafood feast in the most stunning setting.

Relaxation.
Alongside a programme of planned events, we will make sure you have enough time to relax on the farm, enjoy the pool and the amazing views.
After feedback from this year, we also plan to have Pilates or Yoga classes from a professional teacher 3 or 4 times during the week. All these events are inclusive in the price. Where events are held away from the farm you will be transported in a minibus.
Where events involve more walking, they will be optional, and alternatives will be available.
